Mark is passionate about local, ethically farmed produce and works with a number of trusted farmers and growers in the Cornish region. He has a passion for foraging and punctuates his dishes with the wild foods found amongst Cornwall’s woods and famous coastlines. He works with the simplicity of the ingredients and ensures that key flavours are respected and enhanced, not obscured, so that the quality of the ingredients can be enjoyed.
